Pizza Scrolls



I've been looking for new things to pack in our family's lunch boxes each day. Sandwiches and wraps are great, but it's nice to send your family off with something different.

So after much exploring on the internet I found PIZZA SCROLLS! This is a recipe that I've tweaked to suit us. The dough isn't a real pizza dough, but more of a savoury scone dough, and it works great!

These pizza scrolls are so so delicious - and they are a HUGE hit with our family!

Dough Ingredients:

2 cups of self raising flour
2 tablespoons of butter
3/4 cup milk
1 pinch of salt

Pizza sauce:

If you would like to make your own pizza sauce - this is how I do mine:

Put one tin of tomatoes, 1/2 a medium brown onion, and a small bunch of basil into a food processor and process till smooth. If you want some extra vegetables in your families diet add a little bit of cooked pumpkin, or some red kidney beans before you mix it all together!

Method:

Preheat the oven to 180 degrees celcius.

Mix flour, salt and butter together either in a mixer or with your fingers like you would do a scone mixture.

Once it's like 'bread crumbs', and the butter has been mixed into the flour, slowly add the milk and combine into a ball of dough.

Knead lightly for a minute or two.

Roll out on floured surface to a large rectangle shape just under one centre meter thick.

Spread your pizza sauce, or tomato paste onto the dough, and add your favourite pizza toppings.

Roll up from the longest side.

Slice into 12 slices.

Put into a oven tray with baking paper.

Bake for 25 minutes, or until golden brown.
