Basic Cake Recipe



This my friends is the cake base I use for almost every cake that comes out of my kitchen!

I was originally given the recipe when I was about 10 years old! And I have adjusted it to have less sugar, and to suit most cakes.

This is the original recipe:

Quick mix chocolate cake!

1 3/4 self raising flour
1/2 teaspoon of bicarbonate soda
1/4 teaspoon of salt
3 tablespoons of cocoa
1 1/4 cups of sugar
1 cup of milk
1/2 cup of melted butter
2 eggs



Here is my version to make it a base recipe for all other cakes

Ingredients:

2 cups of self raising flour
1/2 teaspoon of bicarbonate soda
1/4 teaspoon of salt
1/2 cup of sugar
1/2 cup of room temperature or melted butter
2 eggs
1 cup of milk

Method:

Put all ingredients into  a mixing bowl and mix till combined!
Place in a greased cake tin and cook for 30 - 40 minutes at 180 degrees celsius.
Or into patty pans (tip - place patty pans into muffin trays to help them keep their shape!) and bake for 15 minutes in a 180 degree celsius oven.



To change the flavour of the cake choose one of the following:

Vanilla cake - add 1 teaspoon of vanilla essence

Chocolate cake - add 3 tablespoons of cocoa powder

Orange cake - instead of 1 cup of milk use half a cup of milk and half a cup of orange juice and the zest of one orange

Apple cake - add 1 teaspoon of vanilla essence, 1/2 a teaspoon of cinnamon or mixed spice and peel and slice an apple and lay it on the top of the cake before baking.

The options are endless with this base cake recipe!
