Lemon Cordial




Did you know that each year your lemon tree has two crops??!! Yes I know! I didn't know this until we got our own lemon tree.

The first and biggest crop is in winter -'citrus fruit season' - the second though is in summer! The funny thing is though, in winter the lemons are big and the brightest yellow! In summer they are smaller, and stay green! But when you cut them open they are juicy and yellow! Many would probably go dry on the trees with people waiting for them to go yellow on the outside! But I am taking advantage of these delicious delights and making lemon cordial!

Here's how I make mine;

Ingredients:
2 litres of filtered water
6 cups of white sugar
2 Tablespoons of citric acid
2 Tablespoons tartaric acid
The juice of 12 lemons
The finely grated zest of 1 lemon (optional)

Method:
Combine the water and sugar and heat on the stove until dissolved.
Add the citric and tartaric acids and dissolve well.
Cool slightly and then add the lemon juice and lemons zest.

Pour into sterilised bottles.
Store in the fridge for up to 4 months.

Or process them - I did mine using the Fowlers Vacola method.
