Gayle's Boiled Fruit Cake

Gayle's Boiled Fruit Cake - This is such a delicious fruit cake, it's a light crumb with a rich flavour!

Ingredients:

2 cups mixed dried fruit
1 3/4 cups of water
125 grams of butter
1 cup of raw sugar
1 teaspoon bi-carb soda
2 eggs beaten
2 cups sifted SR flour

Method:

Preheat oven to 180 decrees C.

Put mixed dried fruit, water, butter, sugar and bi- carb into a saucepan and boil till frothy.


Let mixture cool. Then stir in eggs and flour.


Bake at 180 degrees for 1 hour.


Delicious warm with cream or custard. Yum!
